Keto Greek Salad is a modified, low carb version of traditional Greek salad. It's loaded with many of the same fresh vegetables and Mediterranean flavors, but with less carbohydrates. This classic recipe, also referred to as Village Salad or Horiatiki, is a healthy and delicious dish to serve, especially during summer.

Every week, I try to make a different salad. This is one way that I can ensure that I am getting a wide variety of keto-friendly vegetables and add a little more fiber into my diet without getting bored. I like using new assortments of colorful vegetables to create light, low carb salads that are still satiating.

If you've been following a keto diet for even a short period of time, you know how important every little gram of fiber is. While many people on a keto diet don't count macros from vegetables, and some don't count calories at all, I still track both. So, to make this Keto Greek Salad lower in carbs, I basically eliminated the red onion that you would find in almost every other traditional Greek Horiatiki Salad recipe out there.

If you just have to have it, add a small amount and take that into consideration if you count macros from vegetables. This recipe includes all the other fresh vegetables you would expect to find in an authentic Village Salad typically served in Mediterranean cuisine. Keto Greek Salad is dressed in a light vinaigrette too. It is the best healthy recipe to make during summer when you're craving fresh foods.

I know that I'm not re-inventing the wheel here, friends. I'm always just looking for simple ways to enjoy the flavorful foods that I love so that I don't feel like I'm missing out. And, I enjoy sharing these little tidbits of knowledge with you in case it's not something you've thought to try before.

I'm a big, huge, gigantic believer that lots of flavor and variety is the key to success when it comes to a keto or low carb diet.

So let's get to making this Keto Greek Salad, shall we?

Why This Recipe Works

This light salad is quick and easy to make, but it packs a lot of flavor. It is the perfect dish to make anytime and is full of healthy vegetables.

You can even make it ahead of time, to serve during the week when you don't have time to cook. Just add the dressing once you're ready to serve!

This recipe is low carb, gluten free and keto friendly too. You will find yourself coming back to this classic recipe again and again.

How to Make Keto Greek Salad

Ingredients

  • Spring Mix Lettuce (optional): traditionally Greek salad does not contain lettuce.
  • Cucumber (diced)
  • Tomato (diced)
  • Red Pepper (or green, or a mix)
  • Feta Cheese (crumbled)
  • Kalamata Olives (chopped)
  • Red Onion (optional, will add a bit more carbs to the recipe depending on how much you add. You can also swap out tomato for onion or reduce the amount of both to keep the total carbs in this recipe about the same as written.)

Prep!

The prep for this Keto Greek Salad recipe is basically, chop, dice and crumble all of the vegetables, kalamata olives, and cheese as needed.

Create!

If you are using lettuce, add that to a large bowl and top with the chopped vegetables.

Whisk together the olive oil, vinegar, oregano, and salt to make the dressing. You'll need to whisk vigorously to emulsify the oil and vinegar. You can also use a blender, if preferred.

For presentation, you can line the ingredients up on top of the salad and serve with the Greek salad dressing on the side. You can also toss the salad with the dressing and serve.

Tips & Techniques for the Best Keto Greek Salad

  • You can swap out red pepper for green pepper, or use a mix of the two.
  • For a more authentic Greek Salad, add red onion. Make sure to take that into account if you are counting macros.
  • This is a great recipe for meal prep. Leave the dressing on the side until you are ready to eat to prevent soggy lettuce.
  • Need to up the protein content or want to turn this into a more filling main dish? Simply add some grilled chicken!

Many will argue that traditional Greek salad should not have lettuce. However, many restaurants and recipes will still call for lettuce, likely as a way to bulk up the salad.
